Feta Mushroom Pasta Sauce
This sauce is simple, creamy and tangy. Prepare when your pasta (or spaghetti squash) is cooked and drained.
Salt and heat mushroom slices in olive oil until browned. feta photo Turn off heat. Add crushed garlic, dry lemon thyme or basil , and stir. Mash feta with a little water to make it slightly liquid. Stir the cheese mixture into the mushrooms and heat. When feta has dissolved, your sauce is ready. Pour over pasta, and a dollop of pesto , and serve.

Feta Greek salad
Peel and slice 3 cucumbers 1/2" thick. Slice 3 tomatoes into wedges. Thinly slice 1-2 red onions . Combine 1/4 cup of extra virgin olive oil , 2 tablespoons of red wine or cider vinegar, chopped mint , and dry oregano. Combine oil mixture with the cucumbers, tomatoes and onions. Add salt and pepper to taste; add olives if you like. Top with slabs of feta and serve with crusty bread .

Feta with greens
Wash and chop greens . In a skillet over low heat, sautee crushed garlic in olive oil. When the garlic is translucent, stir the greens into the pan, and cover for 1-2 minutes. When the greens are cooked, add a dash of lemon juice and salt. Add crumbled feta, stir and serve. You can also cook chopped kale with olive oil, garlic sesame seeds, and top with crumbled feta.

Feta and fruit
Arrange sliced pears, cherries and peaches on a platter. Cube feta and place in the platter's center. Surround the fresh fruit with dry figs, dry apricots and almonds. Serve and enjoy!
